Preheat oven to 350 degrees.
Chop ham into bite sizes and combine with onion in an 8 inch skillet to sauté in 1 tbs. oil. In a large bowl, beat eggs, buttermilk, and oil together. Add dry ingredients and whisk until smooth. Add chopped greens, hominy, ham, onion, and cheese. Pour mixture into a greased 10 inch skillet and bake for 50 minutes or until golden brown. Remove from oven and let sit for 10 to 15 minutes before slicing.
