East Indian Cornbread

Ingredients

1 ¼ cups Martha White Cornmeal

½ cup Martha White Self-Rising Flour

1 cup Mayfield Buttermilk

½ cup Mayfield Cottage Cheese

1 egg

1 cup chopped cooked chicken

½ teaspoon black pepper

2 teaspoon coriander

½ teaspoon turmeric

2 teaspoon ground cumin

1 teaspoon garlic powder

¼ cup melted butter

Directions

  1. Mix all dry ingredients together, then add chicken, cottage cheese, egg, butter, and milk.
  2. Bake at 400° for 30 minutes in a greased 9 x 13 pan or Lodge Cast Iron Skillet.
